The traditional Tuscan kitchen is, for Marco and Rosa, a "precious treasure to preserve, to elaborate and to reintroduce": in his dishes the local recipes are deconstructed and reinterpreted with surprising matching between flavours, with attention and care for the presentation, colours and solidity combination.
